Thankful and Blessed

Hello everyone!

Cooler weather is moving in and Thanksgiving is a few days away.  Our family celebrates this gathering a little differently than most do.  Thanksgiving is generally held a week earlier, at my home or my sister’s. Somewhere to host the crowd. Most of the family travel to their extended families on Turkey Day or spend the long weekend camping.  This year, we celebrated even earlier, on Sunday, November 4 for both Thanksgiving and to honor my mama’s birthday.  All the counter tops in my kitchen were full of traditional and favorite dishes brought by the “designated” family members.  The birthday girl had requested a 6-Layer Coconut Raspberry Cake, which was topped by a large number of candles!  The Happy Birthday song was sung by close to thirty relatives and three of her great-granddaughters sitting on “Granny’s” lap anxiously awaiting the end of the song.  This is followed by the children plucking the candles from the cake to suck the frosting off the bottom of each one!  What a sight!  As I looked around the room, I could not help but be amazed at the growth of our family.  I joke and say, I was the one that started the whole mess, as the firstborn. Mama is pictured here with my children who are the parents of her five great grandchildren.  As her health deteriorates, it was important to celebrate her birthday with many of her favorite foods, laughter and lots of love.

The memories of my sweet husband and other family members who were not there with us brought back the “rain”.  The sting of reality. For a brief time, all was good as I buzzed around doing what I do best, cooking in my kitchen, my comfort zone.  Dressing, Herb Turkey Breasts, Southern Seasoned Butter Beans  Pistachio Salad, Butterscotch Haystacks, Sweet Tea, Cranberry Sauce and the birthday cake were my contributions to the feast.

My Mother-in-law and my Sweet HusbandSo, I am adding my often-requested Dressing, also called Stuffing, recipe which was adapted from my mother-in-law’s recipe (pictured with my husband).  I am also adding some casserole favorites that I hope you will enjoy on your Thanksgiving table… or counter tops, as is tradition in our family. Some people ask what is the difference between Dressing and Stuffing.  Well, Dressing is baked in a pan and Stuffing is cooked inside the turkey as it bakes.  I could just hear my sweet husband asking about leftovers as we would get ready to “make a plate” to reheat for supper.

Giving Thanks One Postcard at a Time

Writer Ralph Marston once said, “Make it a habit to tell people thank you. To express your appreciation, sincerely and without the expectation of anything in return. Truly appreciate those around you, and you’ll soon find many others around you. Truly appreciate life, and you’ll find that you have more of it.”

A few years ago, my friend Julie Turner Smith did a yearlong Thank You Project. It was a letter writing and blog project in which she recognized and thanked people who enriched her life and/or made our community an even better place to live. I loved the project and started one of my own that year during Lent. I enjoyed it so much, and I’ve tried to keep it up, though not as formally.

It’s been a sentimental holiday season, and though I didn’t take time to do Christmas cards, I’ve thought many times how fortunate I’ve been to have such a great support system over the past 21 months. Today, I was cleaning my office and found a book of thank you postcards that I bought months ago. A quick flip through it showed that I had not used even one. Then I had an idea to start a new project, similar to my friend’s project, only with the postcards. I have no details other than to send all 24 by the end of 2017.  With each one I send, I’ll make a note in the book cover, and that’s as detailed as I’m going to get.

The first postcard is on its way to someone I don’t know who lives in my neighborhood. Every Christmas, they have the best light display I’ve ever seen. The big bushes in the front yard are each a different color, and it looks like a Pantone wonderland. Some years they put it up later than others, but every year we squeal when we see it and ride by it countless times. It’s not Christmas until the lights are up on Ponte Vedra Drive.

So the next time I remember a kindness out of nowhere, I’m going to send a little postcard to the sweet soul(s) who made a difference in my life.

Give Thanks for Leggings and Salsa (And Some Other Important Stuff)

Thick-and-Chunky-Salsa1I am very blessed, and I am thankful every day for my life’s many gifts. I am thankful for the best friend and partner that I am married to, the precious babies that call me “mommy,” a best friend that keeps me sane, a good job with good people, a roof over my head, and many sweet friends strung around the world that keep me updated with their many “statuses.”

But there are a few things that I am thankful for that are a little less traditional. Maybe they’re even a little trivial, but worth giving thanks for all the same.

In the World of Fashion

I am thankful…

…for the wedge. I am 5’4 and have no tolerance for uncomfortable stilettos.

… that leggings and tunics are still on trend (not just skinny jeans). I am especially thankful for those this Thursday around 3 p.m.

…for the long and flowing maxi dresses (see craft beer and chips & salsa below).

In My Mommy World

I am thankful for…

…that time between 8:30 p.m. and 10:00 p.m. when both kids are asleep and truly look like cherubs.

…the “sleep sheep” (though I will never understand, nor be able to explain, why that sheep can make a whale sound).

…more modern technology: DVD’s in the backseat on long road trips.

In Some Space and Time

I am thankful for…

…when I can visit the restroom alone, not necessarily for any particular reason, just to grab a moment to be alone.

…the ride from daycare to work when I am quiet and optimistic that today will be the day that I am organized, thoughtful, and full of grace….before reality sets in as I realize I have on different shoes or forgot to sign a permission slip.

In the Kitchen

I am thankful for…

…chips and salsa, salty enough to make my hands swell.

…caffeine to help with the less-than-cherub times – normally between 2 a.m.- 4 a.m. –with my one-year-old. Sometimes he hates sleep and me.

…the emergence of craft beer (see forgiving fashion trends above).

…the occasional cold Diet Coke, so fizzy it burns. Please do not tell me how bad they are for me; it falls on deaf ears and the damage is done.

I hope your Thanksgiving is filled with all of the big things: love, family, and time together. I also wish you a side of quiet time with long naps, stretchy sorta-pants, and a craft beer –  or at the very least, a quiet trip to the bathroom and enough caffeine to keep you going.
