Treasured Traditions…Fire It Up & Pass The Biscuits!

It’s that time of the year when many of us may experience feelings of nostalgia.  I love reminiscing about holidays past.  pic 2On Thanksgiving Day, rest assured, my Daddy will be outside raking and burning leaves in his brick fire pit.  (He will probably also be sporting a tie!)  I adore watching him stand there stoically with his hands propped up on the rake while he watches the leaves burn.  It always sparks great conversation when my son and I smell a fire off in the distance in crisp autumn air.  I’m thankful God has blessed us with another year for Daddy to light his traditional Thanksgiving bonfire.

I also need to introduce you to my maternal grandmother (Maw).  She was the only one of my grandparents that I remember.  She was no bigger than a minute but she owned a large personality.  She passed away many years ago at the tender age of ninety.  One thing I always loved watching her do when I was a child was make homemade buttermilk biscuits.  She would scoop out a handful of lard and circle it around the huge mound of flour in her “magical” wooden bowl.  She would “squish” flour and lard as she slowly poured buttermilk into the bowl with her arthritic hands.  She would incorporate and knead it until it possessed the consistency of perfection. That small handful of lard “magically” transformed into a large ball of dough.  Maw would then pinch off a bit and roll it in her tiny hands.  As she placed that ball of dough on her baking pan, she would gently place her knuckle prints across the top of each biscuit.  This was a must!  She often remarked without the knuckle prints, they just wouldn’t taste as good!

pic 3My precious Mama has continued making these biscuits after Maw passed away.  I had always wanted to learn but it just looked so daunting.  Every Thanksgiving at Mama’s house, I watch her in action.  She always makes it look so easy!  Last Thanksgiving (2017), she just wasn’t herself.  She was experiencing a great deal of pain in her back and could hardly stand, but she just HAD to make those biscuits.  I told her to sit next to me in the kitchen and teach me to make them instead.  It was time to pass the torch!  Mama didn’t realize I was also experiencing an excess of pain in my body related to RA, especially in my hands; however, I was willing to suffer through the pain for my sweet Mama!

pic 1I grimaced when I started pouring cold buttermilk into the bowl incorporating it with the lard and flour.  After a minute or two, a Thanksgiving miracle happened!  It turned out, this was VERY therapeutic for my hands.  Once I finished, I felt fantastic!  The smell of freshly baked biscuits wafting through the air was enough to make anyone’s day!  I could hardly wait for both of us to taste one piping hot from the oven!  My oldest brother Tommy was certain we would be using them for weapons, but I’m happy to report that my first batch of biscuits turned out quite good.  I had a great teacher, but of course Maw AND Mama’s biscuits remain unmatched!  Maybe this year she will teach me to make her homemade giblet gravy.  I’ll be making the biscuits!

We truly need to pass on precious memories and treasured traditions to our future generations.  I’m wondering if we should even revive some that we’ve “forgotten.”  So much seems to get lost along the way.  When did we get in a big hurry to do everything?  The answer is…just one moment at a time!  Let’s just slow down this holiday season and simply enjoy the journey.  God bless you and your family!  Happy Thanksgiving y’all!

  •  I have lost one additional pound since my last post (for a total loss of 5 pounds). I hoped to be further along by now, but you know…Halloween candy and all.  I have a fondness for Reese’s cups!  (Who knew?)  Only 15 more pounds to lose!

Thankful and Blessed

Hello everyone!

Cooler weather is moving in and Thanksgiving is a few days away.  Our family celebrates this gathering a little differently than most do.  Thanksgiving is generally held a week earlier, at my home or my sister’s. Somewhere to host the crowd. Most of the family travel to their extended families on Turkey Day or spend the long weekend camping.  This year, we celebrated even earlier, on Sunday, November 4 for both Thanksgiving and to honor my mama’s birthday.  All the counter tops in my kitchen were full of traditional and favorite dishes brought by the “designated” family members.  The birthday girl had requested a 6-Layer Coconut Raspberry Cake, which was topped by a large number of candles!  The Happy Birthday song was sung by close to thirty relatives and three of her great-granddaughters sitting on “Granny’s” lap anxiously awaiting the end of the song.  This is followed by the children plucking the candles from the cake to suck the frosting off the bottom of each one!  What a sight!  As I looked around the room, I could not help but be amazed at the growth of our family.  I joke and say, I was the one that started the whole mess, as the firstborn. Mama is pictured here with my children who are the parents of her five great grandchildren.  As her health deteriorates, it was important to celebrate her birthday with many of her favorite foods, laughter and lots of love.

The memories of my sweet husband and other family members who were not there with us brought back the “rain”.  The sting of reality. For a brief time, all was good as I buzzed around doing what I do best, cooking in my kitchen, my comfort zone.  Dressing, Herb Turkey Breasts, Southern Seasoned Butter Beans  Pistachio Salad, Butterscotch Haystacks, Sweet Tea, Cranberry Sauce and the birthday cake were my contributions to the feast.

My Mother-in-law and my Sweet HusbandSo, I am adding my often-requested Dressing, also called Stuffing, recipe which was adapted from my mother-in-law’s recipe (pictured with my husband).  I am also adding some casserole favorites that I hope you will enjoy on your Thanksgiving table… or counter tops, as is tradition in our family. Some people ask what is the difference between Dressing and Stuffing.  Well, Dressing is baked in a pan and Stuffing is cooked inside the turkey as it bakes.  I could just hear my sweet husband asking about leftovers as we would get ready to “make a plate” to reheat for supper.

Humpty Dumpty Had a Great Fall

Well, my 6-week healthy eating and working out is not going as planned. I have lost 6 lbs and zero inches. I am disappointed in myself—again. I have not been walking and have used my new stationary bike only three times. I am stressed with school, overly fatigued and no energy. And, have no self-control when it comes to Halloween candy! I am one that stress eats, happy eats and in general have a very sweet tooth. There, I said it—all my excuses. When I usually get started on a “diet”, I am focused and usually obsessed about it, but, if I slip up, well, I slip up in a big way. I was keeping track of everything that went in my mouth and well, after 2 weeks of that along with my brain saying, I’ll log it in when I get up tomorrow or when I get home and one day leads to two, then 3 weeks of no logging my intake.

So, starting November 1st, 2018, I will once again, begin my one thousandth diet and I have promised myself to start keeping my food journal logged in on my phone as well as a daily exercise program. I am beyond upset and disappointed with myself—again. I am tired of being tired, tired of being overweight and unhealthy and tired of staring at the cute clothes in my closet that I cannot fit in. I am like Oprah in that I have a whole range of sizes. I am in disgust at my body, my thighs especially and my sagging skin.

I will once again try the Keto diet. My goal for now is to lose 10 lbs by January 31st, 2019.  I think that is a doable goal. If you would like to join me, please email me at tmcameron@crimson.ua.edu. I do better if I have a partner to keep me in line.

1 can pumpkin and 1 box Devil’s food cake mix.

Mix both ingredients, bake as ordered on cake box to make the cupcakes, refrigerate after baking, they last for 5 days. You can also slice open and place a tablespoon of fat-free cool whip in it and reheat for about 10 seconds in microwave. Yum-yum—enjoy!! Depending on the size and quantity they are 2 to 5 points each.

Two Common Mistakes for Celiacs

When I was first diagnosed with celiac disease, I got some really bad advice from a well-meaning, but very misinformed dietitian. She said that I shouldn’t allow myself to go hungry just because I needed to eat gluten free. She said, if push came to shove, that I could just eat a sandwich or get a burger from McDonalds. Her primary concern was that I not feel that the gluten free diet was impossible and she thought that if I felt hungry, I might just give up altogether. She really did mean to do right by me, unfortunately, she advising me to start thinking in a really unhealthy way about my condition. She was teaching me that it is okay to cheat sometimes. However, cheating, when you are a celiac, isn’t the same as cheating on your diet when you’re trying to lose weight. The stakes are much higher and the damage that you will be doing to your body will be long lasting.

This story about my encounter with a dietitian highlights two of the most common problems that I have personally faced as a celiac. The first mistake sort of leads into the other, so I think it’s important to talk about them together.

Mistake #1: Letting yourself get hungry.

This is difficult, I know. The world is basically a food desert for celiacs and the gluten sensitive, especially when you’re travelling or in a hurry. So, what do you do? You become that person who always has food on them. People sometimes laugh at how much food I tend to carry with me, but I’ve learned the hard way that it’s never a good idea to let yourself get really hungry because that leads to eating things that you know you shouldn’t eat out of desperation. As bad as it is to go hungry, it truly is worse to cheat. You will never feel better if you are constantly setting yourself back with poor eating choices. Also, you are putting yourself at risk for damage that may take years to heal or may not heal at all, let alone the fact that you are increasing your risk of colon cancer, etc. Who wants to live like that?

And the worst part about making poor food choices is that it leads to mistake #2…

Mistake #2: Deciding whether you’ve had a reaction to gluten based on how your stomach (or body) feels.

This is one of the most detrimental mistakes I think that we celiacs make. While celiac disease does affect your stomach and intestines, it is really an autoimmune disorder. This means that the primary issue with celiac disease is not that your tummy hurts, it’s that your immune system doesn’t work right. It mistakenly attacks you instead of doing what it’s supposed to do, which is to protect you from germy invaders. Sometimes when your immune system attacks you, your stomach will hurt, or you will have constipation, diarrhea, headache, etc. But, sometimes when your immune system attacks you, you won’t feel anything. Your body, however, will still be damaged and that damage will cost you in terms of your health.

And, I’ve mentioned this before, but it’s worth saying again: don’t trust any supplement that promises to relieve a “gluten attack” or to alleviate symptoms of a gluten reaction. There is no scientific evidence that these supplements work. Remember, a reaction to gluten isn’t just an upset stomach, it’s an immune response. If those supplements make your stomach feel better, then go ahead and take them if you’ve mistakenly eaten gluten, just realize that they cannot reverse or even stop the damage that your immune system is unleashing on your body.

Spring gets all the press for cleaning season, but there’s something about fall that makes me want to spruce up. Maybe it’s a need to prep the nest for the coming cold, or the likelihood of holiday visitors. Or maybe it’s finally cool enough to make manual labor a little less daunting (as in less sweaty).

Whatever the reason, a few days ago I had a home improvement experience that could have had disastrous consequences. Since this is, after all, a blog site tied to women’s health, I want to share it with you so you might avoid my mistakes.

cleaning-bucket-mld108211_sqA handyman was replacing weather stripping around the doors in our house. While the old pieces were off and before the new ones went on, I had a chance to clean off the grime in the doorframe. Regular spray cleaner and a paper towel weren’t cutting it, so I grabbed a sponge and my big bottle of household bleach.

You probably see what’s coming next. As I scrubbed directly overhead with that wet sponge, a large drip hit me right in the eye. Fortunately, it was more water than bleach, and I was steps away from a sink where I quickly rinsed my eye. Even so, it teared and burned for hours and my vision was slightly blurred the rest of the day. But could have been much, much worse: Getting chemical cleaners in your eye can cause a corneal ulcer or even blindness.

Chemicals aren’t the only dangers lurking out there for you and your family this time of year. See if any of these potential eye hazards are on your to-do list:

  • Cleaning out gutters and downspouts
  • Chopping wood for the fireplace
  • Trimming errant tree limbs and shrubs
  • Washing exterior windows and doors
  • Pointing up mortar around bricks or cracks in cement patios

All of these tasks involve serious chemicals, flying debris or both. And if you’re like me, you can’t afford to hire someone to take care of all your home chores. But going the DIY route doesn’t mean you can’t tackle these jobs safely. It just takes a little care, forethought and — ahem — common sense.

Number one tip: Wear protective goggles or glasses. The American Academy of Ophthalmology recommends every household have at least one pair of ANSI-approved protective eyewear for use during household projects, such as yardwork, that put your eyes at risk. Don those goggles while using toxic chemicals, too: Fumes from paint and cleaners can also damage your eyes.

In my case, I could also have protected my eyes by using my feet— as in going to the garage for a step ladder so I could work at eye level, not above it. Making sure you have — and use — the right equipment can make the job both easier and safer.

It might take a few extra minutes. And no arguing, those goggles aren’t exactly the height of fashion. But won’t it be worth the time and trouble to actually be able to see the fruit of your labors?

Taking off the mask

pic 1It’s the season of Halloween, so what better time to talk about disguises, costumes and masks? But I don’t mean the kind of mask you wear on Halloween.  I’m want to turn that literal mask into a metaphor. As a cancer survivor, we sometimes have to put a mask on to hide what we going through. We dress up in our superhero costumes or hide behind a disguise and pretend we are someone else.

Have you seen the commercials that show how people walk around with the face on a stick to hide how they are feeling? They hold up the smiling face but behind the mask they are sad. Well, that’s how it sometimes feel when you have just finished treatment or even when you first get diagnosed with cancer. Everybody is looking at you and they respond to how you feel. You don’t want your loved ones to worry nor feel like thy have to give up their life because you are going through.

We put on the mask to show we are happy and strong. We wear that mask and say that we must be the best Christian with great faith because you attend church and people ask the questions’ Where is your Faith, You know God would not put more on you than you can bear.” Well that’s true, but at the time that’s not how you feel. Then you put on the mask to be the best mom because you feel you have to hide the fear so that your children will know how to handle situations, but I pose the questions if we are not teaching them to face the reality are we really teaching them the right way to go. Then we wear that superwoman mask. No matter what I feel I can conquer this. I will go to work, clean the house, attend PTO meetings, help in the community and most of all accept all phone calls and listen to all their problems while you smile and said I am doing good.

Why do we feel we must wear a mask? After Halloween, children take off the mask, no longer pretending to be someone they are not, so why don’t we as adults take off our mask? Underneath that mask still lays a beautiful, strong, courageous woman. A person not ashamed of her weakness because that takes strength. A woman not ashamed of her hair loss because her beauty is in her real smile. A woman whose tears build her and not tear her down. Women, men and children reveal yourself. TAKE THE MASK OFF! BE YOU! YOU ARE BEAUTIFUL!

Count Your Blessings

This blog may start out dark but stick with me.  I see so many people allowing negativity to consume them.  However, I’ve also been blessed to witness people going through devastating times and maintaining positivity throughout.  I wanted to use this blog to encourage readers to seriously consider their circumstances and what alternatives could be. pooh quote

Do you have a child that has never and will never be able to walk or talk or feed themselves or give you a hug?  I am blessed not to have encountered this in my life, but I have a cousin that has experienced this for 22 years with her son.  She could have chosen to put him into a long-term care facility, but she did not.  Her son is front and center in her life daily and she still finds ways to enjoy life and smile.  She inspires me!

Do you have cancer or are you watching someone in your family suffer from this devastating disease?  I am blessed to have avoided this diagnosis, but I have known many people fighting through this challenge.  Some lost their battle and others are still in the fight.  I have learned so much from the people facing this struggle as well as the people that have cared for them.  They have all inspired me!

Are you homeless or jobless or worried about where your next meal will come from?  I am blessed not to be in these situations, but I have met people that have been in all of them.  When I taught U101 at the University, I used to do a group community service day with all my students each semester.  We would visit places like the Salvation Army where homeless people could stay for a night or get a hot meal.  We did projects like painting rooms, serving food, etc.  We would always end our day with someone who was dependent on those services telling us their story.  Those people inspired me!

My point in mentioning all of these things is to ask you to think about all of these people and their situations as you go through your daily life.  Try not to allow yourself to get mired in negativity, but instead, tell yourself that there are many people going through much tougher times, and count your blessings.

quote 1I hope that most people who know me would say I’m a pretty positive person.  I tell myself I’m only limited by my willingness to work toward what I want or need in life and I play that on loop in my head always.  I take responsibility for my actions, and I understand that I am where I am each day only because of the choices I have made.  Well, that’s mostly the case.  There was never a chance of me playing professional basketball at 5 feet nothing!  I pray daily for those less fortunate and I thank God for all that He has given me.

I have found that a positive attitude can carry you through anything.  It may not make the outcome of your challenge what you hoped, but it may keep you from sinking into the doldrums of depression.  Give it a try.  Remember, your track record for getting through tough times is 100% so far.
